Jambalaya

Oh Cajun food. I’ve missed you. This quick and easy jambalaya recipe is perfect for this time of year. Warm, southern, comfort food. You’re welcome. Happy Mardi Gras!

I used this super easy recipe, cooked in our cast iron skillet. Delicious! The only ingredient I couldn’t find was the Andouille sausage. Admittedly, that specific variety of sausage is a pretty big deal when you make a Cajun dish. But this northern girl couldn’t find any. I substituted a spicy sausage, and it worked just fine.

So! Slice your sausage and fry it up in some butter.

IMG_2242Add spices and tomatoes. Then add the green stuff.

IMG_2246Add the rice and stock. Simmer!

IMG_2253…add your shrimp. I used frozen shrimp that was already de-veined and de-tailed. Some things take too much time. Thaw it, and you’re good to go.

Serve with beer. Good beer.
