Saturday Small Talk

The busy season at work is quickly coming to an end. I’ll be sad to see the people go, but have to admit I’m eager to return to “normal life.” Whatever that means.

Darcy posts a lot of paleo friendly recipes that are really tasty! Can eating paleo improve your waist line? Stone Soup presents some research for those who might consider paleo for weight loss.

  1. A blueberry recipe for you. Chicken with blueberry sauce
    4 boneless chicken breast halves
    1 T. oil
    1/2 c. apricot preserves (I used orange marmalade and loved the tang it added)
    3 T. Dijon mustard
    1/3 c. white wine vinegar or cider vinegar
    1/2 c. fresh or frozen blueberries
    Brown chicken in oil for about 4 minutes. Combine preserves and mustard; spoon over chicken, reduce heat; cover and simmer for 15 minutes. Remove chicken from pan and keep warm. Add vinegar to skillet, simmer, uncovered for until sauce is reduced by 1/3 about 3 minutes. Stirring occasionally. Stir in blueberries. Serve over chicken and rice or quinoa.
