Loaded Nachos

I love a good plate of nachos. Lots of toppings. Melted cheese to hold it all together. Mmmm good!

Nachos are pretty simple to make, and very easy to substitute, add, or subtract ingredients to create exactly what your taste buds desire. Simply load up your chips, melt the cheese, and go!

Loaded Nachos

Serves 1-2

You’ll need:

  • Tortilla chips
  • 1 small chicken thigh or breast, diced and cooked
  • 1/2 bell pepper, diced
  • 1/2 small onion, diced
  • 2 tsp. taco seasoning
  • 2-3 green onions
  • Mozzarella cheese

1. Preheat your oven to 350 degrees. Layer tortilla chips onto a cookie sheet or a pizza pan.

2. Cook your chicken in a bit of olive oil over medium high heat. Set aside.

3. In the same skillet, add your diced onion and pepper. Cook until the onion is translucent. Add the chicken and taco seasoning. Cook for 3 or 4 more minutes.

4. Top the chips with the contents of the skillet.

5. Shred cheese over chips. Sprinkle with sliced green onions.

6. Bake for 7-8 minutes, until cheese is melted.

The subtle sweetness of the pepper, combined with onions, and the hint of taco seasoning, all covered in melted cheese, made for a winner of a nacho plate! Top with your favorites–sour cream, salsa, avocados? Take your pick!
