Apple Bran Muffins

While this may seem like more of a fall treat, it hit the spot on this dark, stormy Tuesday night. This recipe is adapted from the Joy of Cooking recipe for bran muffins.


  • 2 cups of flour
  • 1 1/2 cups oat bran
  • 2 Tbs. sugar
  • 1 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground ginger

In another bowl, combine:

  • 2 cups yogurt
  • 1/2 cup molasses
  • 1 egg
  • 4 Tbs. butter, melted

Add the wet ingredients to the dry ingredients, and fold the mixtures together. Do not over-mix! Muffins hate over-mixing. Instead, use a folding motion to combine all of the ingredients.

Add one cup of peeled, diced apples.

Bake at 350 degrees for 25 minutes. This recipe will make approx. 18  muffins.
