Saturdays rock

So far, I have:

  • Gone to the farmer’s market (bought eggs, turnips, green peppers, tomatoes, and a half bushel of apples)
  • Made Saturday morning pancakes πŸ™‚
  • Run 3 miles
  • Raked the yard
  • Practiced
  • Watched Robin Hood (with Russel Crowe. It was good!)
  • And made dinner

I had a hankering (yes, a hankering) for spaghetti tonight, but knew that I should eat some more veggies. Today hasn’t been too heavy on nutrition.

So, I wilted some spinach to mix into my spaghetti, and flavored up the sauce with some onion! The easiest way to wilt spinach is to dump it into the colander you’re going to use to drain your pasta. Like so.

Then, drain your pasta through it. Instant wilting. I’m a big fan. Many thanks to the blogger that suggested that one. True confession: I forget where I read it.

Alright, now add your sauce (mine was a generic marinara sauce, ground turkey, minced garlic, onion, and oregano).

Top with cheese and voila! Satisfy your pasta craving and get in a serving of veggies.

This afternoon was wonderful. I snuggled on the couch with my quilt and a mug of tea. Perfect. My mug was inspirational:

As you know (as i think you know) a few weeks ago I got Godly confirmation that it was the time to make changes in my life – after at least two years of desire – and so I’m taking life much more leisurely. Even work has become just another thing I do during te course of a day. I love it and it is loving me right back. So just living is what I enjoy doing. Someday I plan on praiseing my Savior, in person, forever. I believ that will be real enjoyable also.

    On another note… another easy way to add vegatables to pasta sauces is to add a package of Broccolli Slaw. Saute it with the onions/peppers. Hurrah for “easy healthy”.

  2. YES. I love what I’m doing right now.

    So much. And I went to our farmer’s market this morning, too. I bought broccoli and peppers and a spring roll. For three dollars. And I’ve been making my own bread. And, yesterday, I made a veggie lentil pasta dish from Egypt/Syria that’s called rishta. It’s in Joy! You should make it… because it’s cheap… and so so so good. I love spices. I love food. I love farmer’s markets.

    Also coffee. And life.

    AND that it’s raining right now while I’m inside under the covers with NOwhere to be and an Instant View movie loading on my lap.

    Yes. Saturdays rock.

  3. I am in St. Petersburg, teaching English, learning Russian, and experimenting with dinner in the little kitchen of our flat. Tonight I cooked this chicken and tomato dish that smelled so good my roommate begged me to share. And that was probably the most productive thing I did this weekend.

    Weekends rock, and life is good. πŸ™‚

  4. Yes & no? I love, love, love knowing that what I do enables the Gospel to go forth, that young Christians are encouraged and inspired, and that slowly but surely Christ is becoming known in the arts.

    But I feel like I could do so much more – that whatever I do just isn’t enough. That is the hard part.
